i think what he was attempting to make was an “elote loco”. literally means crazy corn. this dish is a little different. you have to cover the corn in mayo then roll the corn on the cob with parmesan cheese. then you can add melted butter, lemon, or chile as you please.

Soaking it in water is a REALLY good idea! We’ve roasted corn on the grill all of my life. It’s the best form of corn, but it’s slightly gummy because the grill dries it out a bit. Never thought of getting it wet first.

Why’s that? Nothing wrong with the flag on it’s own but Oliver’s an Essex boy, he can’t have it both ways. It’s very disappointing to see.
